Eat Your Beans Day


July 3 is "Eat Beans Day."  High in protein and low in fat (usually) beans are one of the most heart-healthy foods. The USDA recommends that adults eat at least three cups of beans every week.  I'm sure we do around here, which is about three times more than the average person usually consumes. 

The 4th of July holiday is tomorrow, smack in the middle of the work week, kind of a bummer.  Seattle is supposedly one of the best cities in the country for fireworks and celebrations.  Well, the Millennials can enjoy it.  We always stay home on the 4th, as the logistics of getting down to Lake Union (and back) are daunting, with some of the worst traffic jams of the year. Especially on a work night.

Fireworks are supposedly banned now and our neighborhood is quiet, compared to past years when it went on for days. Of course we'll hear them tomorrow night when we're trying to get some sleep.

An American holiday calls for American food, like grilled burgers. I've been wanting to make a pot of real Boston baked beans from scratch, the kind with salt pork and molasses that cooks for hours.  Since we'll be home, I can soak the navy beans tonight and bake them tomorrow.  There are thousands of baked bean recipes on the Internet, but traditional Boston beans are pretty simple with just a few ingredients. They should come out of the oven looking like a bean lover's dream.
