Pizza

Let's switch gears this morning, and talk pizza. The dough is easy to make from scratch. Best of all, pizza doesn't need to be covered with fatty, salty meat in order to be good-- a cheesy, loaded vegetarian is rich tasting and pretty healthy, too.



A pizza crust recipe is simple:

1 packet yeast dissolved in 1 cup of warm water
1 tbs. of olive oil
1 tsp. of salt
Unbleached white flour


Add enough flour to the water and yeast to form a dough ball, mixing in slowly until just slightly sticky. Turn it out on a board, and knead it for a few minutes adding extra flour as needed. Put it in a bowl and let it rise for about 45 minutes.




Meanwhile, chop some vegetables: we like artichoke hearts, tomatoes, peppers, onion, Greek olives, etc.Spread the dough in the pan, and cover with sauce. This one was made with a small can of tomato sauce, garlic, olive oil and Italian seasoning.
Add the cheese, then top with vegetables and finally grated Parmesan.
Bake in a hot oven until browned. Convection heat is great if you have it.
