
Mahi-Mahi fish is popular in restaurants, especially for tacos and sandwiches. It's mild, firm and easy to cook because it doesn't fall apart on the grill. I like eating out, especially complicated food like Thai, which is so much trouble to make at home and never tastes the same. I'm not as keen for going out for a plate of fish, when I can buy 3 pounds of Mahi-Mahi fillets at Costco for the price of a restaurant portion in Seattle.
Here's an easy fish marinade:
Squeeze 1/2 of a lime or lemon on a plate
Add a splash of olive oil
2 (or so) garlic cloves mashed through a press
Lemon pepper and/or seasoned salt
Coat the fish on both sides, let it sit for about an hour, then grill or broil.

It makes a nice light meal with rice or potatoes. We had it with okra (yes, okra!) the other night. A good dinner, but maybe not
quite as good as this one I made on the grill:
