I made a pretty decent tofu pad thai the other night. The rice stick noodles are the wild card, and don't trust the directions on the packet. In this case, it said to soak the noodles in boiling water for 7 minutes-- they needed twice that to soften up. Just like the Barilla box that says 8 minutes for al dente pasta. Ack!
